Rainbow Veggie & Bean Wraps

Ingredients
For the Wraps:
1 tablespoon olive oil
1 small onion, diced
1 carrot, diced
1 celery stalk, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 cup red lentils, rinsed
4 cups vegetable broth
1 can (14 oz / 400 g) diced tomatoes
Salt and black pepper, to taste
Juice of ½ lemon (optional)
Chopped parsley or cilantro for garnish (optional)
For the Quick Pickled Onions
½ small red onion, thinly sliced
¼ cup white vinegar
¼ cup water
1 teaspoon sugar or honey
½ teaspoon salt
Instructions
Make the Quick Pickled Onions
In a small bowl or jar, combine the vinegar, water, sugar (or honey), and salt.
Add the sliced onions and stir.
Let the onions sit for at least 15 minutes while you prepare the rest of the recipe.
Make the Yogurt Sauce
Mix together the yogurt, lemon juice, garlic powder, salt, and pepper.
Assemble the Wraps
Spread the yogurt sauce over each tortilla.
Add the lettuce or spinach.
Top with the beans, carrots, cucumber, bell pepper, and avocado.
Add a few quick pickled onions.
Roll the tortilla tightly.
Slice in half and enjoy!
