Quick Red Lentil & Vegetable Soup (Ready in 25 minutes)

Ingredients

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 1 carrot, diced

  • 1 celery stalk, diced

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 cup red lentils, rinsed

  • 4 cups vegetable broth

  • 1 can (14 oz / 400 g) diced tomatoes

  • Salt and black pepper, to taste

  • Juice of ½ lemon (optional)

  • Chopped parsley or cilantro for garnish (optional)


Instructions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the onion, carrot, and celery. Cook for about 5 minutes until softened.

  3. Stir in the garlic and cumin, and cook for 30 seconds.

  4. Add the red lentils, vegetable broth, and diced tomatoes.

  5. Bring to a boil, then reduce to a simmer. Cook for 15 minutes, or until the lentils are soft.

  6. Season with salt and pepper. Add the lemon juice if desired.

  7. Serve as is, or blend briefly with an immersion blender for a smoother soup.
